| Fakher AL-Din: Lattakia – Aleppo –
Syria
Fakher AL-Din AL-Ma'ani II is one of the Arab
princes who built a citadel in Badiat AL-Sham
near Palmyra.
Fakher AL-Din is also a name of many food stuff
products which are all characterized by being
made of fruits and flowers of Syria. So, it is
a symbol of natural products prepared from the
soil of this generous land which produced the
first fruits and flowers in the world.
These nutritional liquids are prepared according
to an agricultural almanac starting at the beginning
of the year until its end, where we prepare the
product according to the fruits or flowers of
the month in question, as follows:

Tangerine Syrup
Where the fruit of the native mandarin is squeezed
and combined with sugar + citric acid.
Making the syrup that way keeps the specific mandarin
aroma in this concentrated syrup. Mandarin juice
+ sugar + citric acid = Concentrated syrup.
February
& March -
Orange Syrup
We make the syrup of natural orange witch is made
from the native orange that has special flavor.
We add the sugar to it as we did for the mandarin
syrup. It is also concentrated syrup. Orange juice
+ sugar + citric acid = Concentrated syrup.
April

Blossom Water
In this month many flowers grow, and what is important
for us here is the flower of bitter orange which
is considered one of the gifts of nature due to
its countless benefits and characters, where it
is distilled, and the distillation process is
costly due to the value of the flowers and the
cost of distillation, and it is wholly different
from the artificial blossom water which is very
cheap and useless.
The blossom water is used in several therapists'
way, and it is used in many confectioneries. And
white coffee is made from it (where one part of
natural blossom water of Fakher AL-Din is added
to four parts of boiled water with sugar added
as needed). So, it is a relaxing digestive beverage
used especially at night instead of real coffee.

Rose
Water
In the rose water we distill the Damask rose,
-which is very famous in Aleppo – and it was said
that Salah AL-Din AL.Ayoubi used to perfume himself
with rose water in the morning before going to
battle. So, the natural rose water is a refreshing
liquid and a repairer of the cells of the body,
in addition to its sweet-smell. And it is also
used in confectioneries and syrups.
June -
Cherry Syrup -
water of unripe grapes
Cherry Syrup: We squeeze the cherry for making
cherry syrup. Aleppo and the neighbouring cities
as Ariha are known by this black cherry (called
Washna), its juice is used in making delicious
cherry ice-cream. The syrup also is made from
cherry juice + sugar and citric acid.
Cherry juice + sugar + citric acid = Concentrated
syrup.
Water of Unripe Grape: In June also we prepare
the water of unripe grapes after being well washed
and squeezing it with addition of little bit of
salt before sealing the bottle.
July -
The Blackberry Syrup
Fakher AL-Din prepares the syrup of natural blackberry
(mulberry) from the black Shami blackberry or
from the Roman kind as called in the regions of
Lattakia. It is one of the blessings of Allah
where the juice of natural blackberry is like
a chemical factory entering the body to clean
it from several parasites and harmful bacteria's.
And we all know that the Apht is removed by putting
a little quantity of it on the gum or by just
drinking it.
The blackberry syrup, as all Fakher AL-Din products,
is prepared from the blackberry juice + sugar
and citric acid.
Blackberry juice + sugar + citric acid = Concentrated
syrup.

Grapes vinegar -
Apple vinegar
Fakher AL-Din makes vinegar from grapes and apples.
The benefits of vinegar if it is made from grapes
or apples are countless, and there is no room
here to mention them all, but it is said that
the Chinese before 5000 years, were using vinegar
as a medicine.
The flavor of vinegar is delicious and it is
different from lemon. Vinegar is used in salads,
and in pickles to preserve and enhance its taste.
It is put in bottles of different capacities starting
from 50 CL up to 5 kg.

Molasses of Pomegranate
Fakher AL-Din completes the year by preparing
another blessing of Allah that is the natural
Molasses of Grenade. We insist on the word "natural",
that is the juice of sour grenade which is boiled
to a certain degree in order to give it the required
viscosity to be ready to be used in many food
uses as salads and hot meals.
So, Fakher AL-Din exploits the blessings fruits
or flowers of all months within the year to give
the consumer an original and natural product without
adding any flavor or coloring just to keep up
the traditional way to enhance the benefits.
Therefore, we are very proud in making such liquids
which maintain our legacy in foods and beverages.
